Ready-to-use Mallow is a creamy, slightly chewy and softly fluffy filling with a marshmallow character. It has a neutral flavor that can easily be varied with our other products such as Flavorings, Truffles, and Les Fruits Fruit Fillings.
• Lightly chewy and creamy marshmallow-like consistency that can be piped, spread, and used as a filling.
• Can be frozen and thawed. Retains its creamy character after freezing.
• Stable at room temperature.
• Can be torched to create a crisp, golden surface.
• Has a matte finish when used straight from the bucket and can be whipped to achieve a glossy finish.
• Stable structure and highly resilient. Mallow can be re-whipped repeatedly.
• Based on egg white from free-range hens and contains no gluten or gelatin.
• Suitable for vegetarians.
