Rollex is a pumpable fat based on vegetable oil that can replace margarine. Specially adapted for sweetbread and makes the dough more stable, more compliant and easier to handle. Production is rationalized at the same time as the baked bread gets a better freshness, a proper increase in quality and a good taste. Rollex gives excellent results even at low doses. Can also be used in food bread instead of margarine, and then needs to be supplemented with a bread improver.
